Growing up on a farm in a small town in Kentucky, Olivia has always had a relationship with fresh, quality food. She was raised in a family where cooking was a significant way to show love. She started working in kitchens at 15. At 18, Olivia jumped at the chance to move to Summit County, Colorado in 2014. Since then, she has had the opportunity to work with truly extraordinary influential mentors, refining her skills and developing a deep love for the craft. She became fascinated with the industry and found a real passion for creating unique, memorable experiences. She creates vibrant, delicious, and nourishing meals using high quality, local, and seasonal ingredients.
Starting off as garde manger, she worked her way through the ranks of the industry, gaining invaluable experience along the way. In February of 2024, armed with determination and ambition, Olivia accepted the position as Head Chef and opened Prospector Gastropub. Her journey is a testament to perseverance, dedication, and a relentless pursuit of passion.
